Procedure for preparing Vegetarian black bean soup

  1. Soak beans overnight and drain.
  2. Heat oil in a large soup pot and add in onions, garlic, red pepper, carrots, celery and celery leaves. Cover and cook until vegetables start to soften for about 10 minutes.
  3. Add water, canned tomatoes, bay leaves, oregano, cumin, pepper, cilantro, and salt. Bring to boil, and add drained black beans.
  4. Bring to boil. Reduce the heat and simmer until the beans are tender for about 2hours.

Procedure to prepare Vegetarian black bean soup

In a heavy-bottomed pot, heat oil over a medium heat.  Add onions and stir to coat with oil. Cook for about five minutes until translucent, stir once o twice.

Stir in oregano chili, salt, cumin, garlic an pepper. Cook for 1-2 minutes until fragrant.

Add in black beans, stir and cook for 1-2 minutes.

Add water and bay leaves. Boil, reduce the heat and simmer for about 25 minutes uncovered.
